Yes, there are purple vegetables. Had you forgotten eggplant, Belgian endive, and purple cabbage? You'll also find purple bell peppers, purple asparagus, and purple carrots. The phytonutrients responsible for the color (usually in the phenol or anthocyanin category) seem to be helpful in slowing down the ravage of aging. Urinary tract health and memory function benefit from purple vegetables. Keep an eye out for these beautiful vegetables in your local market.
You'll even see blue and purple potatoes — which happen to have three times the anthocyanin content of white ones. Smaller than baking potatoes they have a natural buttery flavor, so you'll have no trouble eating them without added fat. For an easy way to add some purple to your day, simply toss some purple kale into a salad.

Extra Care for Eggplant

Eggplant is one of the most delicious ways to get your daily dose of purple, but this delicate vegetable can spoil easily. For the best results, use eggplant within a few days of purchase and cut it immediately before cooking. Letting it sit can cause it to turn brown. So can using a carbon blade knife to cut it, so always use stainless steel.
