Most people need a cup of coffee (or three) in the morning to kick-start their day. I know I certainly need mine! Remember, however, that caffeine (tragically!) is an Insulin Trigger. As if that weren't bad enough, the chemicals used to create most decaffeinated coffees can be toxic to your system. It seems like a total lose-lose situation! So how can you enjoy a good cup of joe in the morning?  Here's the trick!

Nothing is more delicious than freshly picked tomatoes. My favorites are the vine-ripened heirloom varieties. In this recipe, the tomatoes are grilled, which changes the flavor and chars them in the most delicious way. There's nothing like a stack of grilled vegetables... Mmmm. For a real taste treat, try topping them off with crumbled feta cheese and a reduction of balsamic vinegar. Your taste buds will thank you for it!
