Everyone's afraid of cooking a goose, but trust me. It's easy. You usually have to order one in advance from your butcher, and when you do, here's a useful tip: Always request a goose that's on the large side (10-14 pounds) because there's a lot of shrinkage during the cooking process! One goose typically serves 4-6 people. Therefore, if you're planning a large dinner, it's best to order two.
