Food for Thought
Parsnips are a starchy vegetable — as are butternut squash, yams, and carrots — but they're not as high in sugar as potatoes. Therefore, if you're in Level 2, you can enjoy this vegetable in a Protein/Healthy Fats meal without creating as big of an imbalance as you would with similarly starchy veggies. Try boiling them and mashing them up with cream cheese and roasted garlic. Yum!
