To make an excellent fish stock, you must procure very fresh fish. The best way to ensure really fresh fish is to check the eyes. If the fish has a film over the eyes, it's been around awhile. The fish must have clear eyes, or it's going to smell and not taste good. I use mild white fish because I only want a subtle taste of fish. My preference is snapper or grouper, but cod or orange roughy is good. Never use an oily-type fish such as mackerel.
