I make these tomatoes regularly and store them in olive oil in the refrigerator. What a treat! It's easy: Preheat the oven to 325 degrees, slice your tomatoes in half crosswise and place them on a baking sheet, cut side up. Sprinkle a little salt on them, if you wish, and drizzle them with olive oil. Then bake these beauties for about two hours, until they're wrinkly on the outside, but still somewhat moist at the center. Serve warm or cool. They have an incredible taste!
